How do I begin a new game? I want to literally start over from the beginning with nothing. Sure, I'm happy to keep my main progress saved, but in old versions of the game you could have multiple saves.

I enjoy building up my skills and stats and gear, I enjoy the natural progression of the story without breaking the 4th wall and selecting each mission. This is a really big part of the gameplay for me. How can I enjoy these things?

Edit: Here's How (thanks to replies)

1) Open Uplay and click the settings cog then select settings. Deselect sync with cloud. Close Uplay.
2) go to: C:\Program Files (x86)\Ubisoft\Ubisoft Game Launcher\savegames
3) open the folder inside and then the next one (named 720, 857).
4) MAKE A BACKUP / Move the 4 files contained in that folder. This is your main save.
5) Once the folder is empty, start the game.

LOL, it's a sad state of a UI with no new game or option to save, just dumb continue

Navigate to this directory "C:\Program Files (x86)\Ubisoft\Ubisoft Game Launcher\savegames\7dbbe78d-8e5b-41fa-90b0-094369735256\720" and delete or move your save files. The next time you start the game it'll begin from scratch.

Make sure to replace the 7dbbe78d-8e5b-41fa-90b0-094369735256 in the directory though, as it is unique to your Uplay account.

Make sure you disable cloud synchronization in uPlay before launching the game, otherwise it'll just redownload the game files again.

You can turn it back on afterwards if you want, but you don't have to.

Sweet! thanks for the replies. Made a backup copy of the saved directory, deleted the files in 720, un-synced from cloud. It works.

Kinda gross that people need to go fumbling about through their directories just to replay the game, but I'm super excited to play it again.

I got the game on Steam, and on my system the save games are in the same place, but in an 857 directory rather than a 720 directory.
