2 questions: what is the altitude at which the fuel mixture should be leaned? I take off at sea level, more or less, at full rich. I'm sure it has to do with the particular aircraft, but is there published anywhere more precise setting guides? Second, which of the popular aircraft have auto prop pitch, or, more to the point, which are manually-adjusted? I start the takeoff at finest pitch in all aircraft.

That depends on the plane you fly...

Try looking from external view - make fuel mixture leaner some - if the prop goes faster (you can hear this too) - it's good
And if you see black smoke/oil coming out... better get the mixture down fast http://ubbxforums.ubi.com/infopop/emoticons/icon_wink.gif

I'm not sure the planes in the game have much relationship to the real life mixture routine. Basically in the game, if you see black some coming from your exhaust you're running too rich and need to go at least one step leaner.
