How does the performance of the Bf109 and FW190 change when they reach high speeds and high altitudes, I know that some other aircraft havetheir performance diminish in these situations, is it the same for these?

The controls gets sluggish at high speeds for all planes at all altitudes.
The Bf 109 has heavier controls than the Fw 190.

Planes with poor high speed handling.(in FB/AEP)

Bf 109
Yak's
La-5/F/FN
Zero
Hurricane

Planes with good high speed handling.

P-51
P-47
Fw 190
Ki-84
La-7
Spitfire(heavy in the roll, great elevator authority)

The Bf 109 has excellent performance at all altitudes. Taking on VVS birds requires at least 3000m of altitude. Fighting the Spitfire, Mustang and Thunderbolt is hard at the high altitudes. The Spitfire MkIX as it is modelled now is a deadly high alt foe for the Ta 152H even.

The Fw 190A can be used from ground and up to 5000-6000m. Use the Fw 190A in high speed fights, make sure not to black out.
The Fw 190D can be used from ground and up to 7000-8000m. It's faster than any other VVS or US fighter from 0m to 6000m. For fights above 8000m, take the Ta 152H. It's a tough bird to handle and will fall into a spin very easily(contrary to the real thing). The Ta also has good high speed handling, although the rollrate is quite sluggish at the higher speeds.

Beware of the La-7, it's unaware of its RL limitations at high altitudes. If you are in a D-9 it will outclimb you and outturn you at virtually all altitudes.

When it comes to aircombat, I'd rather be lucky than good any day!
