So the other day I was playing a off-line multi-player game. I was playing on the "islands" map where each team has its own island is there anyway to add ai to help fill the map?? I don't have a reliable internet connection and have never and currently never played online.

One more question is there any way to quikly build a custom mission?? I have messed around with it for a couple hours and just get really frusterated by the process.

Yes, you can build entire mission in Full Mission Builder.

Kozhedub: In combat potential, the Yak-3, La-7 and La-9 fighters were indisputably superior to the Bf-109s and Fw-190s. But, as they say, no matter how good the violin may be, much depends on the violinist. I always felt respect for an enemy pilot whose plane I failed to down.

Not in DF mode, but cooperative mode is just like single player except that you can have more than one human pilot.

Just how bad is your internet connection? IL2 is remarkably robust when it comes to shaky connections, as long as the data flow doesn't get interrupted too much a slow connection is not neccesarily an impediment to online play.
