does anybody use only their fists when fighting swordsmen? and if so can you stab them with swords and stuff when their on the ground?

Sadly there is no ground strike animation for the swords, only for the hidden blade.

You can kill the guards with your sword when they are on the ground but Altair just swings his sword in the air but he is still hurting the guard.

And using your fists against swordsmen is kinda hard...

can you do any dodge animations when using fists? no way to parry their swings is there?

You can't parry with your fists.

And you do get a dodge ability but it's more skipping backwards then dodging.

using fists against armed attackers = very bad idea. prolly the only way you can die in the game....

I found, when fist-fighting, once you get in very close and keep the assault constant, armed opponents can't block or counterattack very well.

I've fist-fought my way out of a few clusterflusters before, and killed a templar or two.

I'm sorry to say that this is highly inaccurate.

Once you start punching the stuffing out of a guard, for some reason, most of the time, the others will just stare at you, not even bothering to poke you.

So yes, it isn't that hard to beat the **** out of twenty or so guards with your fists (unless you suck really badly), and there is a dodge animation, and you can choose which direction you want Altair to move in.

You just have to time it right.

does the dodge when done correctly give you the ability to pound the guards mercilessly?

The dodge move just makes Altair jump away from the guard or whoever you are fighting.
I guess you could pound him mercilessly after doing that, so the answer to your question is yes.

The dodge does not have to move backward, you can also move to the right or left, or in fact, any direction, except towards your enemy.
