Ok, well these tips probably arn't the best, but they work for me. Get out your map that came with the game case. (if you don't have one, try to ask for a screenshot! I would give you one but I don't know how to put pictures on this post) Ok, look on the "High Naval Traffic" routes. These are the routes that these Task Forces will most likely take. If your lucky, you can find one of these out in the open! I've only seen these task forces about 3 or 4 times, and they were all fairly close to this route. These Task Forces can consist of: 4-7 Destroyers, and multiple Air Craft Carriers.
The Destroyers escorting the Carriers are usually very fierce, and escape is unlikey. If your are planning to attack the force, make sure the water is nice and deep, and make sure you have full oxygen aboard, because you probably won't get to surface for a little bit. Also, conserve your battery power, because if you run out of that, your doomed. Those Carriers also carry many planes, and if they can confirm you are in the area, they will launch them, some planes aboard are dive bombers. It's best to see them first at long ranges. Get into a position where they are heading towards you, and will pass by you. Watch the Destroyer's patterns and confirm how many ships are total in the fleet. ***IMPORTANT*** DO NOT Report back to base, or send a message of any type, Destroyers can intercept your messages and pinpoint your location! (this message intercepting has a name, I forget what it is called though)
Once you know enough about their patterns, number of ships...etc, move into a place to attack. Switch to silent running, and wait. (this can be hard, because you need to have enough romm between them and you to do all this) These Task Forces can move quickly, although some don't move very quickly. Hit one of the Destroyers first, thats one less Destroyer to handle later! After that, they will probably brake up, and go at high speeds, zig-zag...etc, so you won't be able to him them now. Your next target should be the Carrier(s).
Try to hit them in the stern, or propeller section. (I know, that will be hard!) With their rudder and propeller out, they're sitting ducks! Now, the challenge is to try to sink the Carrier(s) without the Destroyers killing you. If you feel that there's no way out, dive deep and shut off the engines. Once they drift away and slow down, torpedo another Destroyer. Repeat the process untill they're all sunk!

Also, here's some other helpful tips:

1. If there are any other Destroyers in the vicinity of your attack, they will probably come after you, some be prepared!

2. At port, pick up some officers quallified in: Torpedoman and Repariman, they will help!

3. After you attack the first Ship, silent running is not needed anymore, they will be after you like crazy, and all that noise around will make it hard for them to pinpoint your exact location.

4. Try This: When the Task Force has been first sighted, send a message back to base, then get out of there! That might take some Destroyers away from the Task Force, giving you an easy shot!

If you have any encounters with Air Craft Carriers, share it with us here!

Also, feel free to add screenshots!!

I had an ebcounter with 2 Bogue Escort Carriers.
It was in Scapa Flow and I was using the world mod.
They are now on the bottom of Scapa Flow. http://forums.ubi.com/images/smilies/16x16_smiley-very-happy.gif

just go into Lock Ewe starting in about 1941 and there be a lage carrier every time until about 1943 when an escort carrier will also be in there with the fleet carrier and a fiji is always present int here, plus about 4 destroyers that are easy picking. it's a turkey shoot

You can also follow a plane home after he dropped his DCs...

Ive been going into Loch Ewe just about every mission from nearly the beginning and only find a Fiji in there.
