Why does the engine quite on some planes when you pitch the nose of the plane down?

Also, shouldn't they model flames that come out of the exhaust?

Some aircraft had carburated engines and other fuel injection. Early carburated engines had to maintain positive G forces or else the engine would be starved of fuel.

The Bf-109E Vs Spitfire and Hurricane during the Battle of Britain were examples of the uses of the two different technology's.

109's would just shove their sticks forward and nose dive to escape English fighters who couldn't follow such a maneuver do to carburetor starvation and had to roll the plane inverted and pull back to maintain engine power giving the German 109 time to add distance and its superior dive.

Regarding modelling of the exhaust flames...the game engine is now exceptionally old so some of the fancier effects are just not going to be in place.

Well you can use a mod that shows an engine flame at startup. http://forums.ubi.com/images/smilies/10.gif
