Start off higher, faster and better armed?

If I have time I try to get them turning and overshooting above me. For example I will start a turn to the left, then as they get into range will reverse to the right while diving under them then return to my initial left turn. It's far easier to see which way they turn after passing you if they are above you and your movement is shielded by their wings and fuselage. Most of the time they assume you will continue the reversal and try to follow by turning left - ideal since that will bring them right around the corner in front of you http://forums.ubi.com/images/smilies/winky.gif

Nearly the same for me, except I prefer climb over instead of go under ( if I have the energy )

A simple defense maneuver would be a good last second barrel roll.

Whatever you do: DO NOT just point your gunsight at him and fire and hope for the best. Headon attacks against a fighter will most likely ( about 75% of the time ) turn out to your disadvantage, either by gunfire of collision. Guaranteed.

The ONLY way I would do a classic head-on is if I'm low/slow/damaged and there's absolutely NO other alternative to land a shot at someone who will soon kill me if I don't.

If you have time, what you can do is turn slightly away, level out and then kick hard rudder in the direction of the other a/c - IOW sideslip your way pass the other a/c.

If the other pilot doesn't pick this up, he'll be shooting directly at you, and his shells will pass to the one side (feel the force http://forums.ubi.com/groupee_common/emoticons/icon_biggrin.gif)
Make sure that your aim is to the other side of his nose - a slight deflection shot.

'head on' and 'tactics' don't belong in the same sentence. (unless your going for bombers....)

Never do head ons against the AI, it's the one time their aiming will be better and more accurate further out than yours.

If you have speed and your craft is undamaged, why to shoot head-on against a fighter? It makes no sense. Avoiding the head-on, with correct tactics deployed against those people who try to point their gunsight over you as quick as possible and who even try a head-on snapshot, can give you considerably better results... 90-10 or more instead of the 50-50%...
