I actually went through the entire campaign list last weekend and I didn't anything specifically devoted to the Hellcat (not to say I didn't miss any though.)

However, I did happen to find "The Enterprise" which is phenomenal (so far). It follows the "Big E" from the opening days of Pearl Harbor through to the end of the war.

I haven't tried it but I think if you start with Part 2 (Galloping Ghost) you may have more opportunity to fly the Hellcat.

"Cat 'O Nine Tales" gives you Hellcats after a few missions in the Wildcat.

"No Man's Land" is an all Hellcat campaign.

And for something a little different, try "Emperor's Hellcats", which has you flying Hellcats for the Royal Navy in Norway. Short, but sweet!
