I beleive the G model wasn't available for North Africa or Italy, but can't say about the Pacific

Last 17's I've heard of in the Pacific theater were E models.

B-17Ds, Es and Fs all operated in the Pacific prior to 1944, by which time the greater range and payload of the B-24 made it preferable in that theater.

B-17s were operating over N. Africa shortly after the Torch landings, and I believe that once Doolittle took over the 8th AF in late '43, there was a move to concentrate on one heavy bomber type in each strategic AF (8th & 15th) opposing Germany. However, while the 8th had more B-17s and the 15th had more Liberators, both Air Forces had groups operating the 'other' heavy bomber to war's end.
