Depends on what you want - since most of the "easy"/"fun" stuff for the German u-boats happened early in the war, you would probably want to start at the beginning (especially if you're new and want the chance to learn/experiment with some solo merchats and unescorted convoys so you can get better before the enemy does).

I chose to start with a Type VIIB from Kiel in Sept 1939, 'cause that's my favorite type and I didn't want to wait to get to it. If/when I finish my current career (one way or the other) though, I plan to start over with one of the little boats (Type II) and work my way up, just for the extra challenge.

If you wind up liking this stuff as much as most of us do, you'll get around to trying out all the type boats and years at some point anyway, so I wouldn't agonize too much about which type to start with - just pick one and jump in - you can always either trade up if you gain enough renown or resign your commission and start a new campaign with a different type if you feel like it later.

By the way avoid lorient with utter abandon. The slowest and worst port to get out of.
