I know how to look through them, control the aircraft and drop the bombs. But, how do you input the data (airspeed and altitude)? The manual glosses over it. What button(s) do I push to get to that menu?

There are no controls assigned by default, you'll have to assign them yourself. In the main game screen click the "Controls" button and scroll about half way down to the section under the "Bombisght/Gunsight Controls" heading, you'll find them all there.

I know how to put in the information in the bomb screen, but they never seem to drop on the target, I'm releasing them when they are on the cross, what am I doing wrong ?

If you want some reading material there are a load of guides over at www.airwarfare.com (http://www.airwarfare.com/guides.htm).
One of 'em is in my signature, below. It's mainly to do with the B25 but also applies to the Heinkel and to a lesser extent the TB3.
