Since the Mosquito is an all wood plane, I was curious about how well protected the pilot was. What kind of protection did the pilot have and did the Mosquito have self-sealing tanks?

Wood or aluminum construction, a rifle caliber bullet (and larger) is going through it.

In the Mossie, I believe the pilot had a 5 or 7 mm armored seat back. BN had the same but with the top section hinged so as to be folded down for access to the radio. Tanks were self sealing.

Armour
The pilot is protected from behind by armour plate of 7mm thickness, extending
from the level of his seat to the top of his head. The observer is similarly
protected from behind by arm our plate of 9mm thickness, and there is a circular
section of bullet proof glass behind his head so that his rearward view is not
hindered. The upper part of the armour plate is hinged to enable the observer to
operate the wireless which is behind it. There is no armour protection for the
engines.

Fuel and Oil Tanks

Fuel is carried in 10 self-sealing tanks as follows: 4 Outboard wing of 118
galls 4 Inboard wing of 289 galls 2 Centre fuselage of 136 galls 543 galls 2
Fuselage long range tanks if fitted.) 155 galls TOTAL CAPACITY 698 galls Oil is
carried in two self-sealing tanks, one in each engine nacelle and a third can be
carried in the fuselage if the long range tanks are fitted

Did the FB.VI have armoured windscreen?

Hi there, The-Pizza-Man

From 'Mosquito in Action, Part 2', by Jerry Scutts - Squadron/Signal Publications:

"The Mosquito fighter also differed from the reconnaissance and bomber variants in that it had an optically flat bullet proof windscreen rather than the vee windscreen. Additionally, the fighter had a strengthened wing spar to accept the higher stress loads caused by fighter maneuvers, an armored bulkhead was installed behind the solid gun nose and crew entry was changed from a hatch located under the nose to a door in the starboard side of the fuselage forward of the wing."

I believe these changes also applied to the FB.VI, with certain wing modifications to carry external ordnance.
