I have 2 suggestions for your consideration
1) There should be a hotkey for placement of fields. Having to press the teeny tiny button every time you want to start placing fields is tedious and irritating. Maybe when you right click on a building with fields you go straight to field placement?
2) More controversial - What about blueprints in Anno 1800, a la Factorio? I'm not suggesting robots, but sometimes I feel like it would be nice to be able to copy one area to another. You could justify much more complicated trade routes and production sequences if some of the burden of placement tedium were relieved. Even the ability to copy a single building with its farms exactly would be a relief, and shouldn't interfere too much with the feel of the game.
