If I fire a torpedo, hit the target ship and got a verbal cry of "Yaay!" and some accompanying music does this confirm the ship will be sunk, ie there's no need for me to waste any more torpedoes?

I waited and waited but it just looked like my target limped off and I wasnt too sure it actually registered as sunk.

So what actually is an indication that you dont need to fire any more torpedoes?

You should get a notice in the text box saying she is going down. You can also look in the log (press k) and see it listed there.

If it sails away it ain't dead!

There will be a message from the WO to the effect that the vessel has been destroyed and you can check its details in the Captain's Log (hit "K").

Actually, I believe it's the navigator who announces that a ship has been destroyed. I'm sure of this because my navigator often doubles as my torpedo room officer and when he's in the torp room during a convoy strike, i get no announcement that a ship has been sunk.
In the stock game, and with UBWA2.0, a different tune plays in the background than when you just score a hit, which also may indicate a sunken ship.

the easy way to see if it is killed is to look in the captains log to see if the ship and tonnage is noted on the pad. seeing if it is sunk just by plain sight is hard because the boat may be sinking and remains above the water. This means it is not necessarily sunk but could move on not counting to your total tonnage sunk. another indication that the ship went down is a large fireball and the ship completely blows up

If you travel more than 30k's (I think) from the disabled ship, you do not get the credit. At least not until you are told 'ship lost' , then you can go. But, as I said, if you go out of that radius before the ship lost announcement, then you get no credit.
Very difficult when convoy escorts are swarming
