Whenever i change the prop pitch in the He111 it actually seems to change the power settings.

The Hud display will indicate that the prop pitch has increased or decreased but it's actually the power settings that have.

Opening or closing the throttle on the joystick doesn't seem to override it although the HUD may read that power is now 0% the engines are screaming away at full power. Something i'm doing wrong?

The prop pitch on most aircraft doesn't directly control the pitch, but rather the pitch governor. What you're selecting is the engine rpm setting. The governor then varies the prop pitch to try to maintain the selected rpm regardless of power setting.

If you reduce power, the governor will reduce pitch so that the same rpm can be maintained at the reduced power setting and vice versa for increased power. For a more indepth explanation, see this article (http://www.avweb.com/news/columns/182082-1.html)
