Short answer: start with the Ezio Collection on PS4.

You can't really start from the beginning, since AC1 has not been released on PS4 yet (neither has AC3). I don't know if you can play either of them on PlayStation Now or not. You can start with AC2 as part of the PS4 Ezio Collection (which includes the 2nd, 3rd, and 4th games). AC2 is a good entry point to the series and you won't feel lost starting there. After that, you can skip to AC4 Black Flag, the first AC game released on PS4. (It would be better if you could play AC3 in between,) After that, Unity and Syndicate complete the main games available on PS4.

Most people think AC1 and AC3 will eventually be released on PS4 (maybe next year for the series' 10th anniversary). Rogue and Liberation may someday get a current green revival.

Before giving my opinion, it would be better to ask you what kind of order you prefer, story, gameplay or just fun.

Welcome to the Forums! For starters there are 9 main games (6 have extra DLC (that cost money) that add to the story in some way) and 7 spin off titles.
I found a few packs for you that may help:

If you have a PC you can play on, I'd recommend getting a pack like this on amazon or Steam which includes the main games from Assassin's Creed 1-4. https://www.amazon.com/Assassins-Creed-Complete-Pack-Download/dp/B00KM6S21Q

Unfortunately Assassin's Creed 1 and 3 are not available on PS4 or Xbox One, so if you do not have access to a Xbox 360 or PS3, you will not be able to play those games.

If you have a PS3 or Xbox 360 I would recommend buying Assassin's Creed 1 individually (~$10), The Ezio Collection (PS4, has Assassin's Creed 2, Brotherhood, and Revelations with all DLC for $60), and the Americas Collection on the Xbox 360 or PS3 (Assassin's Creed 3, Liberation, and Assassin's Creed 4). At that point, you would only need Assassin's Creed Rogue, Unity, and Syndicate individually. The 3 Chronicles spinoff games are available in a single $30 package. The other 3 spinoff games (Altair's Chronicles, Bloodlines, and Discovery), are not available in bundles. You can find the several bundles listed below:

I know this is a lot to throw at you, but feel free to also check out a timeline I put together for the games. Part A lists the games in order that they take place (helps make the story make more sense). The second is a mission list with the order the missions should be played in for the best story experience. Truth be told, the timeline really only matters for Assassin's Creed 3 and Assassin's Creed Unity. https://drive.google.com/open?id=1_wz25dQyQRtNH-TlJ_curDXoyXKNkwWuaLXCWfNTy6o

If you only have a PS4, you have a choice to make: Start on Modern Day part way through and leave it unfinished, or only play historical parts. Honestly, I'd recommend getting the Ezio Collection, trying the modern day, and if you dislike it, then AC1 and AC3 don't matter too much, and you can happily skip to Assassin's Creed Black Flag and Syndicate.

TLDR; it really depends on what system you have. If you only have a PS4, get the Ezio Collection or Assassin's Creed 4.

Thing is ac 1 and 3 (and maybe also rogue and liberation hd) are playable on ps4, but only by renting them for 90 days and for an exhobiting price. If you are REALLY interested, you can do that via PlayStation store. You search Assassin's creed and it should give you the options on top of the list. Of course if you still have a functioning ps3, you would be way better to use it and buy the game like sigma just said.

Also know there is 3 movie short of Ezio. 2 of them (ac lineage and ac embers) comes with the Ezio collection. The third one (ac ascendance) can be watched on youtube or buyed with at least one other video. For exemple, I have a bluray the shows either ac lineage and (as a special feathure) ac ascendance. Hope it help. ^-^
