Yeah, fly German.. they came with a default ammo counter in the cockpit. http://ubbxforums.ubi.com/infopop/emoticons/icon_smile.gif

There are ammo gauges(hehe wrong word methinks) in the FW190 and Bf 109 planes. In front of you in the cockpit there are two or three vertical white stripes, they will show you how much ammo is left.. Not very accurate, but it will give you a good indication. You should probably testfire a bit to get a feel for how many seconds worth of bursts you got left.

Also there's an ammo counter on the B239.If you look down it's near the bottom of the cockpit display, be warned though it only displays the nose gun ammunition state but not the wing guns.

As indicated from the above posts, the only such indicators are those to be found on the instrument panels of those planes which actually had them. In short, there is no ammo display as in CFS2. You will, however, get a message that your weapon is out of ammunition when it runs out.
