fps is a console command (start console by typeing '>' in chat (just the greater-than sign), then do a ? <command> to get help or a ? to get a list of commands.
>fps START SHOW
is the command you need for fps.

English and American pilots have excatly the same speech packs - no difference http://ubbxforums.ubi.com/infopop/emoticons/icon_frown.gif there are some campaigns online that will give you american voices though (like http://www.netwings.org/library/Forgotten_Battles/Missions/index-11.html ).

I don't realy get what you mean by different times and "installed time" ? If e.g. you want them to take-off at different times, just change the start-time in Object Viewer under Properties.

Could it be you're changing the time of day (i.e. the time when the mission starts) under Edit -> Conditions, instead of the flight's timing? You need to go to the Object > Waypoint tab when the flight's first waypoint is highlighted. Enter the time (time of day, hours | minutes). It must be either the same time or later than the mission's start time. If it's later the flight will spawn while the mission is running, which may cause some stutter.

You may also enter the time at any of the normfly or other waypoints. The program will then recalculate the timing for the flight's other waypoints. But that won't work if any of the recalculated times would be earlier than the mission's start time.

For fps counter in offline missions:

Press Shift-Tab

type

fps START SHOW

Press Shift-Tab.
