I know it was not used operationally, but how would the convergence be set? Was it even possible to move the engine cannon left and right a bit?

(For example: If you wanted Convergence distance at 150 meters and if we assume that the centerline of aircraft was 3 m away from the fuselages, than you would have to move 1,5 m long weapon left or right for 3 centimeters...)

Or would engine mounted cannons just fire straight ahed without convergence?

Convergence on centerline cannons directs the angle the shot travels up and down- not side to side.

Besides, on the 109Z, you dont need convergence. Take the gunpod, and point and fire at things.
