So my question is if you really have assassins ancestors in ACU... Because that girl after prologue said something that they "stole unsequenced memories" which are shown to you afterward... So these memories can't be yours (because you would already saw them). But if you really haven't assassin ancestors then why they chose you?

In ACU, the person that Bishop is talking to is us. Meaning, you and me. When the Initiates website was still active, they intended for us, the players, to become the next present day protagonists. So whether or not you have Assassin ancestors was up for you to decide, to roleplay.

Storywise, Bishop chose 'you' to relive Arno's memories because you are gifted with the Helix console. You have the willpower and genes to remain for long periods of time inside the memories of individuals with high concentrations of First Civilisation DNA (ex: Altair, Ezio, Connor, Arno, etc).

Well but then it doesn't make sense that they just chose some random guy from helix to tell him about assassins etc etc and wante his help...

It does, weren't you paying attention at the start of Unity?
The assassins are recruiting people using the helix into the group called the Initiates
