I like wide view for general flying. It helps me by adding a touch of periphel vision, I don't have to pan as wide to see to the sides.
Gunsight view is only good when you quite close to the target to help line up the shot and it's useful to set angle of attack while diving at ground targets.

I use wide view almost always for better peripheral vision and all instuments are in view.

I find wide view very convenient most of the time. It gives me good peripheral vision (closest to what I would have in RL than the two other views) and allows me to see the instruments without panning.
Gunsight view I use to get better details on a far-away target (e.g.: to better see what maneuver he's performing), to line up a shot when I'm close, and for ground attack.

hi,
it depends on how someone wish to play and the marketing view of the developers:

1. more acardish by zooming in far away targets ...

2. more real... but than the wide view + some gunsight views of some planes(ex. FW 190) are wrong in wide degree
+ camera hight of view

3. or both of the point 1+2 :and than many flightsim PC- games including IL2/FB are in the genre ..

I'm looking forward of cockpit views + camera view design of LockOn...and other new sims in the pipeline.

But remember: what is possible on desktop systems
+ is there any chance of enhanced changes in the running game...?

I've mapped the 13 POV's onto x45 rotary so you can zoom in or out like a camera.

See my post in here (General Discussion) how to do it.
