I host only servers with historically correct planesets, and if possible historically correct maps. I also encourage players either to use the default skins with the right markings or at least use historically based custom skins.
I have found that almost any historically correct planeset is a very good matchup (with the possible exeption of Italian vs. British in 1940)and that makes for a very interesting fight.
I find that if you make all planes flyable, you'll have loads of people buzzing around in their LA 7s, a few nuts flying ME 262, some noobs flying the Yak 9K (it only takes one hit!) and a few LW-junkies flying some sort of 109/190, and perhaps a single Pony along the way, not really very interesting.

I agree that historically correct planesets are the best but for some reason many (most?)servers alow any combination. This is not very fun in my opinion. Also I find the early years most fun. Maybe because I am slow and handle the lower speeds at that time better.
