Anyone know if this can be done?
-
Yes, plus models and animations.
When the tools/dsk are released.

But I've seen people that can retexture things... Like once posted on the forums, a guy who had made his own skin of a mercenary (very cool
), how did he do that?

you can replace the textures with you own. Someone made a golden destert eagle by replacing its .dds file somewhere. I don't know where they are located, but it is possible.

Yes it is possible. And I'm not talking about simple replacement of existing textures (you will not be able to use original texts).
Open the data base view.
Select "Materials".
Place an object you want to skin and select it.
Click third button in the "Materials" - "get material from selection" and name it or leave it as it is.
Resize the settings window in the data base view so you can see the properties and expend your new materials list.
Your textures are going to be under "Texture maps"-"Diffuse".
Now all you need is to make a new folder inside your FarCry directory, put in your own textures in there and choose them as your texture maps.
An example:
As you can see the original textures are there plus some new ones.

Nice, so if I have understood this corectly then you can use both the original skin and your home made?

I think I just said that!
P.S. Elite in the middle is from the game.

What's this database you're talking about?
