I guess you have to reach rank 9 elite.I'm struggling on 7 though i've never considered myself to be a guitar player till now.

Do you mean within the world of the game? Peronally I wouldn't put much faith RS points.
Like somebody else said - record yourself playing unaccompanied and see how you sound - that's a more true measure of your progress.

Then decide if to give up the day job
If you say 'gullible' slowly it sounds like 'oranges'.

The game itself stops levelling at level 11 'Rocksmith' (I think around 20 million points), but the game itself really is no actual measure for whether or not you are a 'Pro'
To truly be considered a 'Pro', you need to be paid to play, and not get boo'ed off the stage (much).

Though personally (hypothetically of course!) I tek either of the 2 on its own and call it good enough

Well, that is kinda a subjective question.

I would say, when you get paid to play and it is part of your regular income.

How good do you need to be ? Depends on what you want to do.
From easiest to hardest Demo guitars at trade shows - easiest pro gig (that I can think of)
hardest ? Join an established internationally known speed/heavy metal band - only the truely gifted need apply
