Why is it that in the picture, it shows a picture of Ezio in the robes, but when you actually equip them, it's Altair? (You can tell by his missing finger that it is not Ezio, plus he's missing his beard, like in said picture.)

It's Ezio dressed as Altaïr is in Assassin's Creed. The face is different than Altaïr's in Assassin's Creed as well. The robe's face is Ezio with a slight growth of mustache.

And yes, his ring finger on his left hand is cut off just like Altaïr's was... But that doesn't make him not Ezio in Altaïr's Robes.
