Who do you think would win in a fight during different circumstances? e. g. Stealth, open battle.

Garret wouldnt come close in a match against Altair. First off, Garret needs to be hidden in the dark, Altair can blend into a crowd and the dark and has more weapons than Garret. ALtair stabs Garret in the butt, while Garret is hiding in the dark trying to get a few gold from a civilian.
I'm a big Thief fan but the outcome of a Garrett vs Altair battle depends on the environment. If they were to battle during the night, Garrett would have the advantage because he's trained to use the shadows to stalk and kill his enemy before his enemy has the chance to react. I doubt Altair has keen eyes in the dark to spot Garrett hiding in the shadows so... Garrett wins.
In the Assassin's Creed world, Altair is trained to blend in with the crowd, and since Garrett won't have any shadows to hide in and since he wasn't trained to a prolonged physical combat... he sticks out like a sore thumb in a crowd. Altair wins.
