But if I do that, how do I make the torpedoes go where I want them to go? I'm not very good at this lol.

when u turn off manual targeting your perascope becomes a point and shoot wepon.

Make sure your torpedo doors are open before you fire. It takes 3 seconds for them to open, and if you don't open them ahead of time your torpedos will be 3 seconds late.
Best place to shoot is when you are 90 degrees off his course. I further wait until the gyro angle is 0 if possible.

How do you manualy open the torpedo doors?

A few ways. Press Q, but using that method if you switch between tubes, it automatically closes them. You can also go to the weapon officer station and click on the toggle switches where the tube lights are, those will open the doors for those tubes. You can do this at the weapon station in the command room or the mini weapon station in the conning tower.
