Start punching your target when you get into a dark area / are away from guards and bystanders. After fighting a little bit he'll give up the information.
dont need him to be in an alley,a fist fight wont attract the guards attention,but in the end altair does stab the guy,but u just run away to the rooftops for that

Just make sure you're in some sort of alley or in an area that it doesn't seem to have much guards to raise attention. Then beat him up untill he spills out the important info.
