When you log into game one of the options is my charecter. Select that option and it will open a screen where you can reset your avatar. At that point you can set up a male charecter if you choose.Keep in mind you will share the same rank as your female avatar.
If you want to save both avatars(using their own seperate rank) you will have to set up a new account. When doing so keep in mind UBI will only let you set up one avatar per E-Mail Address. So you will have to start a new E-Mail Account differnt from the first one you used. If you do plan on using to charecters keep in mind you will have to manually load them at the log in screen. There is another option you might try:
All of your game data is keep in a folder in this directory:
C:\Documents and Settings\Default\My Documents\My Games\Ubisoft\R6Vegas2
The files you will find there are:
PlayerProfile.ini
PROFILE1.DAT
PROFILE2.DAT
PROFILE3.DAT
R6_EquipEquipmentTemplate
R6_SaveCHECKPOINT
R6GameConfig.bin
R6Info
First save the R6Vegas2 folder to another location so you can always restore if you want.
The "PlayerProfile.ini" file contains your key, so don't mess with that.
The other files contain your different setups and save data.
Try deleting the ones you want to start over with, and see if that will work for you.
By deleting savecheckpoint, that should let you start a new game.
