In this, I'm wondering if there is a way to get your trim setting to stop resetting after you turn autopilot on/off. I'm finding that my trim settings are returned to default neutral after shutting down the autopilot. Any way to stop this?

No. In fact I've seen some recommend toggling autopilot on/off quickly as a quick way to neutralise trim
