I just make guncams so I can see where I'm shooting. Helps improve marksmanship. So I just use growler guncam (http://www.growlersoftware.com).

It can make animated gifs, which is kind of cool.

The main software used for creating IL-2 movies is Fraps which captures the footage from tracks, and creates video files. You can use a free demo version, or purchase the full version.

There are many other programs that a few of the more advanced producers use to add special effects, improve compression, etc, etc, but fraps, and windows movie maker to piece together the scenes is generally the main combination used by "beginnners".
