There was another thread that mentioned a mod that highlights target weakpoints where you can get a one shot kill. I dont think i want to install the mod but Id really like pictures or even descriptions where the softspots are. thanks

The centre of the hull is a nice sweet spot for a well programed torpedo!
Identify your target and then pull up your reconition manual, you want to know the depth of the targets hull.
Go to your tatical statioin and set your torp to 1/2 a meter below the bow. Example, if the ships hull depth is 10.5 meters, set your torpedo depth to 11 meters.
Your torpedo will need to be set on magnetic detonation as it shouldn't physically touch the ship, you want your torpedo to go right under the bow and expolde beneath the ship!
If you do all that and stike the target in the centre, the result will look like this:-

This C3 broke in half and sunk with only one torp, hope this helps.
There is a mod out over at SubSim to help identify weak points on targets. I've not tried it yet, but it looks interesting:

You can always play in "easy mode", because then when you identify the contact using the ingame identifying manual, at short ranges and when attacking from the sides at about 90 degrees of the hull, it allows you to select the weak points of the target and shows you where they are.
Those are: ammo bunkers (usually two, only in warships), fuel bunkers (usually too small to be hitten, but with interesting effects), the rudder and the propellor (stops the ship), the machine room (similar to the propellor, but can break the ship in two with some luck) and finally the keel, although it seems to be a better idea to hit under the keel than into the keel.
