Here's the answer:
You can't do it on purpose. The game seeks out the best counter move for the distance you and the guard has. If the distance is just right, he'll do different counter moves - Like Altair kicking tremendously hard on the kneecap.

Oh, trust me. You think that counter move is great? Wait until you finally get the short sword. The counter moves Altair makes with that sword are just so brutal that even I was like: What in the world - I've seen the counter moves in gameplay videos though, because I don't even have the short sword as of yet. I recently killed my first Assassination target and I stopped when I reached the Assassin's Bureau.
I'm digging the dagger counter kills the most so far.
They're just so brutal...
Of course the one that made me wince the most was the swift and sharp kick Altair administered to the his enemy's "gentleman parts" if you get my meaning...

I can easily say that Ubisoft Montreal made the most epic gaming character you play with this year. Altair looks great, the detail of his outfit is amazing, he's totally arrogant and neglects everyone. He's really the kind of person you do not want to meet in the middle of the night in a dark alley. The animation of the character really makes it life like as well.
