at the beginning, what does the knight on the gallows say? i know hes talking to the citizens saying things like "see what happens to those who betray our cause" and stuff...but after that he carries on and then spots Altair and screams something that sounds like NOSE and Altair goes on and kills everyone...ive just always wanted to know

No, he didn't see Altaïr. He says something like "But these men did not <...>, no! No!"

yeah i thought that too but when i read this is the game informer about the trailer, "From atop the raised gallows, he is spotted. The knight's guards draw their weapons, and the white-cloaked figure drops into a sprint." I thought that meant he was spotted and the head honcho knight was yelling something like get him or something

No, not at all. The knights raise their swords only after the first one's dead, isn't that obvious? Gamespot's talking about after he killed all the knights on the gallows.
