The two tubes (one one each side) are pitot tubes to read the air pressuse and speed on ejection. The seat has a number of "modes" it operates in depending on altitude and air speed.

Low/slow- this is the 0/0 mode and gets the pilot out and a chute deployed as quickly as possible.

med/fast-this mode deploys the droug chut but seperates the pilot from the seat so he can be reduced to a safe speed before deploying the main chute.

High/fast- In this mode the pilot stay in the seat (along with his emerg O2) with the droug chute deployed to stabilize the seat and allow him to drop below 10,000 feet before the main chute is deploted.

These modes can be mixed and matched to give the pilot the best chance of surviving at any ejection speed and altitude.

The moving intakes are there to guarantee a constant subsonic airflow to the engines.
They have ramps to slow down the airflow.

They also move up when the engines need more air, and down when there's too much air for the engines to handle.

The things sticking from the side of the ejection seat are for stabilization of the seat upon ejection. They keep the seat from going over backwards and rocketing into the tail of the aircraft.
