Kick him to break his guard. I think the time limit is a bit poor myself.

You have to unlock all the fights and then do the bottom one with the top bet. Fun fun fun! (I haven't done it yet... not sure when I will either)

It's not too hard, just kick then time your attacks, or you could try pumelling them aswell. when you get to the last few fights, throwing sand helps.
