I was wondering if there's a place where I could download the soundtracks for all the SC games. Seeing as most likely the 360 version will be able to play custom soundtracks I was hoping I could put in some old sounds from the other games.

Only the soundtrack for Chaos Theory has been released (correct me if I'm wrong, though). Try Soulseek.
SC1- Name of the game -Crystal Method
SC2- Splinter-Cell Theme -guy who composed the MI soundtrack (can be found while watching credits of SCPT)
SC3- Various Scores -Amon Tobin (Unlockable in SCCT)
