Ok hehe, so I was alittle surprized when I was trimming my plane on the way to intercept some targets, and when I got there I had to missiles left to fire! Hahaha I was alittle dumbfounded for a second.
So I guess my question is - Is droping stuff off the plane, Missiles, bombs, fuel exe. The only way to trim the plane? Because I'm using the basic trim buttoms in game and this seems to be all that happens.
Nope, that shouldn't be happening. The subsonic aircraft all trim using trim tabs on their elevators and ailerons. What aircraft are you flying? IIRC, the controls for the Su-25T are mapped a little differently than for the other aircraft, so maybe that's what you're running into. Not sure though.

I was using Trim up and down with Ctrl > and Ctrl ;
they are mapped out on my HOTAS, I will try agian when I get home today. But last time I'm pretty sure it was those two trim options that were dropping my payload off.
Those are the right ones, and the buttons that jettison your external stores are Ctrl W and Ctrl R, so I guess there isn't any possibility you are inadvertently pushing those. One thing I just thought of though, is that on your HOTAS mapping, you should go through and clear mappings from any buttons on your HOTAS that you don't intend to use. It might possibly be defaulting to a mapping that is putting a jettison command on maybe one of the diagonal positions on that same hat switch on your HOTAS.
