Does anybody have an idea on how to get these rudder pedals mapped to the rudder controls?
Even the keyboard "rudder" controls appear to roll the plane instead of point it to the left or right. I also have a problem with the pedals that they make the menus scroll constantly when they are plugged in...

It sounds like you are flying in simulation mode. If this is the case than you need to know that the controls were named for arcade flight. In sim mode you need to map rudder control to roll right and roll left. This is counter intuitive however it will work. Also I will add this other post of mine that might help over all.

I have seen this problem talked about a ton however I rarely see anyone advising people of the simple fix. Make sure you are making your joystick configurations in the far right column that are all "?" by default. Leave the first two columns alone and only work on the column that says "game controls". This should solve you problems.
