How can I set up the chessboard the way I want to and make my own practice moves; or duplicate instructional moves from a chess book?

Instead You need to select 'Set Up Position' instead of Training Mode or Ranked Play. You'll then be able to arrange the pieces however you wish and resume play as White or Black.
