Okay, i've ordered both of those off of Amazon.
The question I have and I can't seem to find the answer to it.

Are we able to take cover in these two games, or is cover something new to HH?

It is new in Hell's Highway. You'll have to crouch behind stuff in RTH30 and EIB.
