I'm putting together a list of everything that we can buy/sell in the game.

Black smith
-Services
.........Repair weapons and armor
-Weapons
.........One-handed Long Swords
Venetian Falchion 1900f
Damage 1
Speed 3
Deflect 1
Florentine Falchion 5200f
Damage 2
Speed 3
Deflect 4
Scimitar
Captain's Sword
Milanese Sword
Old Syrian Sword
.........Daggers
Channeled Cinquedea 4100f
Damage 3
Speed 3
Deflect 4
Sultan's Knife 4300f
Damage 3
Speed 5
Deflect 3
Butcher Knife 6400f
Damage 4
Speed 3
Deflect 5
Dagger
Damage 1
Speed 1
Deflect 2
Knife
Stiletto
Metal Cestus
.........Maces/hammers
Flanged Mace 10500f
Damage 3
Speed 3
Deflect 3
Cavalieri Mace 20800 f
Damage 4
Speed 2
Deflect 2
Maul
Mercenario Warhammer
*I still don't know that two-handed weapons such as what the brutes and seekers use will be available but it's starting to look like everything Ezio can use with one hand is available for purchase. New info sourced to this article.
-Armor
......... Leather greaves
......... Leather vambraces (1100f)
......... Leather chest guard (4600f)
......... Leather spaulders
......... Helmschmied greaves
......... Helmschmied vambraces
......... Helmschmied chest guard 10800f
......... Helmschmied spaulders
......... Metal greaves
......... Metal vambraces
......... Metal chest guard
......... Metal pauldrons
-Ammunition
.........Throwing knives (50f)
.........Smoke bombs (350f)
.........Bullets (Not sure if the blacksmiths will sell these or if you have to get them from Leo but I'll list them here for now.)

I assume since weapons are on the counter and that there is a suit of armor hanging on the wall, this is a blacksmith. 3 smoke bombs are also on the counter so I think this means Ezio will at least be able to sell smoke bombs here, if not buy them as well.

Tailor
-Dyes
.......Venetian Wine:1980f
.......Venetian Azure:501f
.......Venetian Teal:500f
.......Wetland Ebony
.......Wetland Ivory

-New clothes
-Pouches (to store extra throwing knives and smoke bombs)

This
interview talks about the tailors. It confirms everything I've said so far about the tailors.

Art Shops
In the video I linked above Patrice mentions the art shops but nothing more. I'll make the obvious guess as to what they might sell.
-paintings
-statues
-art work in general

I predict that these shops will be less about buying art, unless as collectables, and more about pawning it. Maybe Ezio finds an ancient statue in the catacombs and will be able to sell it at the art shop.

Street Doctor
-Heal Ezio 200f
-Apothecary supplies
.........Poison 250f
.........Medicine 150f
Factions
-Mercenaries 150f per group
-Courtesans 150f pergroup
-Theives 150f per group
If anybody finds an article which says so, can you tell me if it's possible to hire more than one group simultaneously?
-Money throwing
.........10f

In the same video, Patrice mentions that it matters where you buy. He's talking about the dyes specifically and that certain tailors won't have certain colors of dye. I'm speculating whether or not weapons and any other purchaseable items will be exclusive to certain regions of the game.

Ezio will be able to invest in his villa and the city that it resides in. In the beginning of the game, the city and villa will be in a state of disrepair; by investing the money the two will begin to become restored.

If I missed anything then please tell me.

Ezio has a customizable villa, so the art may be for there.

If that feature is part of the game, I will use it only minimally Shady

If you look at (what seems to be) the piece of metal right beside the "blacksmiths head" it looks like there could be a forge under it.

that behind his head would be bellows and they would generally be attached to a furnace/forge.

Uh no, bellows is to forge as computer screen is to computer.

Well, not quite, but it was the best (and most annoying to me) analogy I could think of...

Add this for Blacksmith:

You can Repair your armour.
You can also buy throwing knives.

if you want confirmation, it's in the TGS Gameplay video.

I do not really like the fact that you can paint your clothes... small adjustments are ok, but I now it looks like you can paint youre whole suit yellow! As Patrice says in the intwerview "You can now paint youre hood yellow" this is really unnecessary! Ezio just need to keep his suite white or else he doesn't look like the assasin we know from the assasins creed games Roll Eyes
