I remember that I heard somewhere, that it was possible to remove the labels from maps, so that they can be used to represent things that they aren't without the place names not matching. Is this true?
Not true unless you're the map maker. A few 3rd party teams have been making maps...such as the Italy dogfight map, Kurland, or the upcoming Slovakia maps. I think Slovakia will come with a version of the map that has no names on it. Not something you can do yourself.
Often in briefings I use the phrase "(target name) is coded (map name) on your maps" to help get around that little detail.
"King of the Arthur" A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effort. If you can read this, thank a teacher. If you can read it in English, thank a veteran.
Another "trick" you can use is to pretend you are waiting on the quartermaster to issue maps in English, French or whatever language your pilots are supposed to use. Until then you are stuck using the maps captured from the enemy or left by another allied country.
