I would like to play a coop campaign with a friend and was wondering if the user campaigns that i have downloaded can be used as a coop somehow. Is it as easy as saving the missions in the coop folder or is there more to it? Will a coop keep track of player stats as well?

The simple answer is no.
True coop campaigns are very difficult to create. Youcan play a user made campaign as coops by moving the missions to your net folder. They will NOT be a campaign, but a series of missions. Stats will not be recorded from one mission to the next. Make sure you modify each mission by removing the player tick from the playr's aircraft of the host is stuck flying the specific plane that was set up in the FMB. There are some mini campaigns out there, which will allow you to play a campaign with your friends: just click on the link in my sig and besides 2 offline campaigns you will find 2 catagories of coops: 2- player co-ops, designed for 4.08 and 4.09 (The LLTM missions) and multiplayer campaigns.
The LLTM missions are special pilot skills championship missions. They are designed for 2 players. The multiplayer campaigns are for a larger number of players, varying from 8 to 16, and they will run as intended also when there are only 2 human players. Those campaigns around the themes: Battle of France, the Murmansk convoys, the battle of Kursk and the campaign in the mediterranean. Just click on the link below to find it. With the LLTM upcoming this weekend (see http://www.lowlandtigermeet.com) there will be new additions: a new mini campaign "Battle of Britain" and a bunch of 2- player co-ops from the pilot skills competition.
