I am new to the FMB. What is the fastest way to create ship convoys? Must each ship be placed one by one?

Yes, you have to place each ship, there's no auto-create for convoys.

I also highly recommend this tool, especially for what you are after, setting up convoys quickly. You can always open up the mission in FMB afterwards to fine tune the things that you can't with Mission Mate.
