Just looking for steps in how one would turn a co-op mission into a dedicated single player mission...or if this is even possible.

It is very easy to do.
1) Open up the mission in the Full Mission Builder. Coops are in Net/Coop/... 2) Determine which aicraft you want to fly. You can use the filter option to elimate all Blue or all Red or show just aircraft to cut down on the clutter. The filter is under the View tab. 3) Click on the View tab and then left click on the flight you want to fly. Select the specific plane 1, 2, 3, or 4, snd then check the box player. 4) Save the mission in one of the Single palyer folders. I just use Multiplayer coop for single missions these days, just gives me the option to fly any AC from the 1 mission without editing, or duplicates.
