First realize the game is about 3 years old now with much less forum activity, it's been only two days since you asked, is a fairly well known issue you could have easily Googled for or gone to Tweakguides.com to get, and as you said had used the method once before and merely forgotten. All that doesn't exactly warrant cussing to get an answer.
The console method you mentioned is not quicksaving per se but rather more like manual saving. I say this because many often mistake this method as the hotkey one that requires you to be in Devmode, which is not the case with this method. Devmode can screw up your game in certain ways so it's best to avoid it.
After opening the console with the Tilde (~) key, type save_game (save name) to save at any point. You can then load by either typing load_game (save name) if you've named the save, or just going to the checkpoint menu and loading the save that shows no screenshot.
Making console saves without naming them will result in them overwriting the previous console save. If you name them it's best to write down the name as the menu does not show the name and you may forget it.
