How can I create a new opening book in CM 11 by loading X number of PGN files? I thank you in sdvance for any help.

Unfortunately you can't.
Somehow "import pgn" got lost from Cm9000 to 10th edition and it didn't re-appear in Grandmaster edition. |

I purchased CM 9000 just to have that ability - I got it from Amazon.com for around $10 including shipping...
