When I play an real game against let's aay Josh 8 year old in noted games. Do I have to save everygames or there is a way to see the stats that I have against him. Loses Wins, etc. And same thing like what are my overal stats in chessmaster

Go to the Windows menu, and choose 'Player Statistics'. I think that will tell you want you want.
